S'mores Fudge: Recipe

Because who doesn't love a less messy and absolutely delicious campfire treat?!
Last night I felt in the mood to make something sweet! One of my favorite things about summer are having bonfires in the backyard and what comes hand in hand with bonfires? S'mores! However, I'm not that huge of a s'mores fan just because I always feel absolutely ridiculous eating it with the marshmallow oozing everywhere and the crackers just crumbling all over me. So while I was on my hunt for healthy recipes I stumbled upon Nikki Dinki's food blog (who is my favorite chef on Next Food Network Star) and came across this recipe for s'mores fudge! And since we had pretty much all the ingredients I decided to give it a go :) So here it is if you guys are in the mood for s'mores:
Ingredients:
14oz Sweetened Condensed Milk
12oz Semi-sweet Chocolate Chips
1 bag of Mini Marshmallows
6-8 Graham Crackers
4-6 Graham Crackers Crumbled
Step 1- Line the bottom of a pan with your graham crackers, you will have to break some apart to make them fit better and cover the whole bottom.
Step 2- Put the condensed milk and chocolate chips into a sauce pan and mix over the stove on medium/high until boiling or completely melted. This will take a few minutes but make sure not to leave the sauce pan because you can easily burn the bottom.

Step 3- Once the chocolate/milk mixture is ready put half of the bag of marshmallows into the mixture. I changed temperature to low/medium and let this first half of marshmallows melt and mix into the mixture.
Step 4- Once that first half is melted in there turn of the stove and add the other half of the marshmallows and mix it all together.
Step 5- Pour the mixture into the pan and then cover the top with the graham cracker crumbles! Once the top is covered with the crumbles gently press it down making them stick on.
Step 6- Cover it and let it sit in the fridge for about 2 hours to chill and harden!
Step 7- Take it out, cut a slice, and enjoy the treat :)
I hope you guys try this out and like it! Let me know what you all think if you do!
I'll be gone for the next three days on a trip to Gatlinburg but I'm so excited to share with you all the adventures I'll be having there when I get back!
Have a great week everyone!

Underwater

What I love about summer is the endless opportunities of adventure and doing new things! And with those new things comes photo opportunities! Which is what Cason and I did last week! We bought a disposable underwater camera, went to the pool, took pretty awesome photos, sent them to be printed and now we have it! I love having a boyfriend who puts up with photos both being in them and taking them. And it's fun to have someone who understands what I see in my head and can put it in the photos (aka the first photo of the group) He's turning into a great photographer :) So these are our underwater shoots!
Hope you all enjoyed the photos!
Wouldn't you love to get an underwater digital camera?! That would be amazing!
Have a great day everyone!

Asian Style Chicken Wings: Recipe

Lately all I've been looking up online are healthy recipes that I can make my family because one 1) I want to get better at cooking just in general and 2) I want to take over the kitchen and get my family on a health kick! So, by only cooking a portion size for each person and nothing more and using healthy recipes we can get healthy as a family and enjoy delicious homemade food at the same time! Plus, being the youngest in the family it's nice to feel like you have responsibility.

So, last night I made Asian-Style Chicken Wings which I found on the Whole Foods Market website. But because I didn't have all the ingredients so I substituted some things and didn't quite follow the instructions exactly...but my goodness they still tasted amazing!

Ingredients:
Canola spray oil
3/4 teaspoon fine sea salt
3 cloves garlic, chopped
1/2 cup hoisin sauce
1/3 cup lemon juice
2 tablespoons light brown sugar
1 onion, sliced
5 chicken wings/person
Preheat the oven to 400F. Make sure you thaw your chicken before hand (because I didn't haha) Mix together your salt, garlic, lemon juice, brown sugar, and hoisin sauce in a large bowl. Get trays ready and spray them with the canola spray oil. Toss your chicken in the sauce and place them on the tray, put slices of onion on top of the chicken wings then pour any extra sauce over it.
After 30 mins in the over flip them over once. Then leave them in there for another 30-45 min. I had a lot of left over onions so I decided to make a little extra sauce and sautee them too add on top of the chicken! It turned out to be a really great idea!
Put a cup of rice on your plate and add your chicken and sauteed onion and there you have it! Your delicious Asian-Style chicken wings! It's as easy as that! Do you like how I tried to plate it all fancy-like?
So there you have it! My first healthy recipe!
If you know any other great recipes I'd love to know!
Hope you all have great days :)

Projector Project

And a day later I've finished! From 120 photos down to 67 and editing them in a span of less than 24 hours! I can feel myself breathe a little better! I absolutely love editing but when there's 67 photos it just feels like such a relief when they're all finished and published!
So, I'm not going to post all 67 photos on here but you can see the rest on my flickr page by clicking here! or any of the photos you like! This photo shoot is a concept I've done before for my photography class that I wanted to expand on and decided to finally do! Who knew projectors could be so much fun!
So yeah...that was fun :)
Hope you all have an amazing day!
